gnome3.gcr: prevent dependency cycle

When overriding gnupg to uss pinentry gnome3 frontend, there is
a dependency cycle:

    gnupg → pinentry_gnome → gcr → gnupg

This commit overrides the gnupg required by gcr to not build GUI.
