This causes problems for packages built using a bootstrap stdenv,
resulting in references to /bin/sh or even bootstrap-tools. The darwin
stdenv is much stricter about what requisites/references are allowed but
using /bin/sh on linux is also undesirable.
eg. https://hydra.nixos.org/build/81754896
$ nix-build -A xz
$ head -n1 result-bin/bin/xzdiff
#!/nix/store/yvc7kmw98kq547bnqn1afgyxm8mxdwhp-bootstrap-tools/bin/sh

Using gtk + darwin support seems broken at the moment, we probably want
guiSupport = "carbon" instead but that doesn't work and something like
macvim is probably better for that. This fixes the build while keeping
guiSupport enabled which might be desirable for eg. +clientserver.
Fixes#45025
Adding all of the extra dependencies isn't always desirable and
overriding a bunch of inputs is a bit cumbersome and brittle.
eg.
python-language-server.override { providers = ["rope"]; }
Broke evaluation of the nixos options.
The option `services.dysnomia' defined in `.../nixos/modules/rename.nix' does not exist.
This reverts commit 5c897b4eff.
